
These delicious fruit and nut balls are a perfect bite size snack, especially when your energy is flagging, and will enliven your taste buds with the unique tang of Davidson plum.

- ½ cup desiccated coconut
- 1 tablespoon freeze dried Davidson plum powder
Ingredients - Balls:
- 2 cups Medjool dates, pitted and chopped
- 1 cup desiccated coconut
- 4 dried figs chopped
- 1 cup almond meal
- ¼ cup raw cacao
- pinch sea salt
- 1 tablespoon ground linseed
- 1 tablespoon freeze dried Davidson plum powder
- 4 tablespoons coconut oil (if oil is solid gently warm on stove or microwave to melt)
- 2 teaspoons vanilla bean extract
Method:
Mix the coating ingredients together in a shallow bowl and set aside ready for coating the balls.
Combine all the ball ingredients in a medium size mixing bowl and mix to form a sticky dough-like consistency. Use a teaspoon amount of mixture to form walnut size balls then roll in the coating mix. Finally place them in an airtight container and pop in the fridge for approximately 2 hours to become firm then enjoy!
These can be stored in the fridge for up to two weeks.
